Sweet Potato Toast

Sweet potatoes make a great substitute for toast. Make these in advance and quickly warm them up in a toaster or toaster oven to serve at breakfast or for a snack. They keep for 5 days in the fridge.


Ingredients

  • U.S. Sweet potatoes
  • U.S. Peanut butter
  • U.S. Cara Cara Orange
  • Honey
  • Chopped U.S. Pistachios

Instructions

  • Wash (and peel if you prefer) U.S. Sweet Potatoes into 1/4 inch slices.
  • Bake at 400 degrees F for about 20-30 minutes until soft enough to eat but not mushy.
  • Serve with toppings to suit your taste. We enjoy U.S. peanut butter, U.S. grown orange slices, a drizzle of honey and chopped pistachios.

Notes

Eggs are great addition as well for protein.
