3 ½ CupU.S. watermelon rind, cut into 1cm squares

½ CupWater

½ CupSugar

Squeeze fresh lemon juice (Use a U.S. Lemon when in season)

1 TspCinnamon

Combine all ingredients in saucepan and simmer over medium heat for about 20 minutes with the lid on. Check and stir occasionally to ensure the mixture remains moist.

Cook with lid on until rind is translucent. If there is liquid left in the pan when the rind is cooked, remove lid to let steam escape. At this point, monitor and stir regularly to prevent burning.

Let cool, then store in fridge for 3 days. Enjoy on sandwiches, over grilled veggies, on a salad or as a condiment to accompany your favourite protein.
