Sweet Potato, Walnut Goat Cheese Bake

Comfort food is calling with this sweet potato & California walnuts recipe. Plus, it is easy to make and share with your family. With very little ingredients involved, this recipe also works well for leftovers whether you love the skins or not!

Ingredients

    • 4 to 5
      U.S. Sweet Potatoes
    • 1 tbsp
      butter
    • ½ cup
      lactose-free sour cream
    • ½ tbsp
      cayenne pepper
    • 1 tbsp
      maple syrup
    • 3 to 4 tbsp
      brown sugar
    • Pinch of salt and pepper
  • Toppings

    • cup
      chopped California walnuts
    • 2 to 3 tbsp
      lactose-free butter or maple syrup
    • Soft Ripened Goat Cheese,to taste

Instructions

    1. Preheat the oven to 425º. On a baking sheet lined with aluminum foil, prick sweet potatoes all over with a fork.Bake until tender, 45 to 50 minutes.

    2. Let cool, then split the tops open with a knife and top with a pat of butter.

    3. Scoop out the baked insides. Try to keep the skins together!

    4. Mash the baked potato insides in a bowl until super smooth.

    5. Mix in the sour cream, cayenne pepper, maple syrup and salt/pepper.

    6. Scoop this yummy filling into the sweet potato skins.

    7. Take all the topping ingredients and put all over your baked potatoes that you have now filled.

    8. Bake for 15 minutes at 375ºF - 400ºF in the oven.

    9. Drizzle with some extra syrup if fits your fancy, and dive in.
