Sweet Potato and Eggs Breakfast Skillet

Ingredients

    • 1 Tbsp
      olive oil
    • 2
      medium U.S. sweet potatoes
    • 1
      small onion
    • 1
      bell pepper
    • 2 cloves
      garlic
    • 1 tsp
      paprika
    • 1/2 tsp
      ground cumin
    • Salt and pepper to taste
    • 3-4
      large eggs
    • Optional garnish: Fresh chopped parsley

Instructions

    1. Heat olive oil in a skillet, and cook sweet potatoes and onion over medium-high heat until softened (10 mins). Stir occasionally.
    2. Add bell pepper, and cook until tender (5 mins). Stir occasionally.
    3. Reduce heat to medium and stir in garlic, paprika, cumin, salt, and pepper, cook for 1-2 mins.
    4. Depending on the size of your skillet, make 3-4 wells in the mixture, crack one egg into each.
    5. Cover and cook until eggs reach desired doneness (4-8 mins).
    6. Garnish with parsley or cilantro and avocado if desired.
