Ingredients

2 tbsp(30 mL) olive oil, plus more as needed

1 tsp(5 mL) sea salt, plus more to taste

½ tsp(2 mL) paprika

3small American sweet potatoes, peeled and cut into ½ inch (2.5 cm) rounds

1small package (5 oz / 140 g) goat cheese

⅓ cup(75 mL) pecans or walnuts (candied if desired)

⅓ cup(75 mL) dried cranberries
-
2 tbsp(30 mL) balsamic glaze

3 tbsp(45 mL) honey

15small basil leaves, for garnish

Instructions

Preheat oven to 450 F (225 C).

In a small bowl combine olive oil, sea salt and paprika.

Take each sweet potato round and coat it in the olive oil mixture. Place rounds on a large baking tray so that they do not touch.

Bake the rounds for 8 to 10 minutes on each side until golden.

Transfer to a serving tray and top with the goat cheese, nuts, and cranberries.

Just before serving finish with a light drizzle of honey, balsamic glaze and garnish with fresh basil leaves.
