Ingredients

    • 2 tbsp
      (30 mL) olive oil, plus more as needed
    • 1 tsp
      (5 mL) sea salt, plus more to taste
    • ½ tsp
      (2 mL) paprika
    • 3
      small American sweet potatoes, peeled and cut into ½ inch (2.5 cm) rounds
    • 1
      small package (5 oz / 140 g) goat cheese
    • cup
      (75 mL) pecans or walnuts (candied if desired)
    • cup
      (75 mL) dried cranberries
    • 2 tbsp
      (30 mL) balsamic glaze
    • 3 tbsp
      (45 mL) honey
    • 15
      small basil leaves, for garnish

Instructions

    1. Preheat oven to 450 F (225 C).
    2. In a small bowl combine olive oil, sea salt and paprika.
    3. Take each sweet potato round and coat it in the olive oil mixture. Place rounds on a large baking tray so that they do not touch.
    4. Bake the rounds for 8 to 10 minutes on each side until golden.
    5. Transfer to a serving tray and top with the goat cheese, nuts, and cranberries.
    6. Just before serving finish with a light drizzle of honey, balsamic glaze and garnish with fresh basil leaves.
    7. Makes approximately 30 rounds
