Sautéed Spinach with Parmesan, Pine Nuts and Medjool Dates

Ingredients

    • 1 tbsp
      15 mL olive oil
    • 11 oz
      312 g fresh spinach
    • ¼ tsp
      1 mL salt
    • ¼ tsp
      1 mL fresh ground black pepper
    • ¼ cup
      50 mL Natural Delights Medjool dates, pitted and chopped
    • ¼ cup
      50 mL Parmesan cheese, grated
    • ¼ cup
      50 mL pine nuts
    • 4 oz
      115 g fettuccine, for serving, optional
    • 10 oz
      300 g sea scallops, for serving, optional

Instructions

    1. Preheat a large pan over medium heat. Add the olive oil, spinach, salt and pepper. Sauté for about 3 minutes or until the spinach has wilted.
    2. Turn off the heat and toss in the Medjool dates, Parmesan and pine nuts.
    3. Serve as a side or as an entrée with fettuccine and sautéed sea scallops.
Notes

Tip 

To lower fat and calories, reduce the amount of pine nuts and/or Parmesan cheese.
