1 tbsp15 mL olive oil

11 oz312 g fresh spinach

¼ tsp1 mL salt

¼ tsp1 mL fresh ground black pepper

¼ cup50 mL Natural Delights Medjool dates, pitted and chopped

¼ cup50 mL Parmesan cheese, grated

¼ cup50 mL pine nuts

4 oz115 g fettuccine, for serving, optional

10 oz300 g sea scallops, for serving, optional

Instructions

Preheat a large pan over medium heat. Add the olive oil, spinach, salt and pepper. Sauté for about 3 minutes or until the spinach has wilted.

Turn off the heat and toss in the Medjool dates, Parmesan and pine nuts.

Serve as a side or as an entrée with fettuccine and sautéed sea scallops.

Tip
To lower fat and calories, reduce the amount of pine nuts and/or Parmesan cheese.
