No-Bake Key Lime Cheesecake
What do you call a lime that opens doors?
A Key Lime!
All jokes aside, this no-bake key lime cheesecake is so delicious! And there's something about limes that screams summer in the winter. You can enjoy this no-bake key lime cheesecake in February when there's about a foot of snow outside or in the summer under a hot day!
Ingredients

Pistachio Graham-Cracker Crust

2 cupsunsalted shelled U.S. pistachios

1 cupgraham-cracker

4 tbspunsalted butter

Optional for topping

Whipped cream

Lime zest

Key Lime Cheesecake Filling

½ cupof softened cream cheese

1 canof sweetened condensed milk (300ml)

½ cupU.S. key lime juice

1 tbspU.S. lime zest

1 cupof heavy cream

Instructions

Using a food processor, finely grind pistachios and graham-cracker together. Add the mixture to a bowl and add the butter. Mix until well combined.

Using a food processor, whip the heavy cream for about 2-3 minutes until stiff peaks form. Add the softened cream cheese, sweetened condensed milk, key lime juice, and lime zest.

Layer your parfait with a base of the pistachio and graham cracker mixture, followed by a layer of the no-bake cheesecake filling. Refrigerate for 1 hour before eating. Enjoy as is, or add whipped cream, lime zest, and the leftover pistachio & graham cracker mixture as a topping.
