1 tbsp(15 mL) canola oil

⅓ cup(75 mL) finely diced red onion

3 clovesgarlic, minced

½ tsp(2 mL) smoked paprika

8 oz(250 g) raw shrimp, peeled, deveined and chopped

1package, 7 oz/200 g frozen snow crab, thawed and squeezed dry

⅓ cup(75 mL) each Florida Orange Juice and Grapefruit Juice

¼ cup(50 mL) chopped fresh coriander

2 tbsp(30 mL) finely diced red pepper (optional)

Hot pepper sauce, to taste

2 cups(500 mL) mixed greens

In skillet, heat oil over medium heat and cook onion, garlic and paprika for 2 minutes. Add shrimp, crab, Florida orange juice and Florida grapefruit juice; simmer for about 4 minutes or until juices are absorbed.

Stir in coriander, red pepper, hot pepper sauce to taste and salt. Cover and refrigerate for at least 1 hour or up to overnight.

Divide greens among 6 martini glasses and spoon seafood mixture over top to serve.

Serving Options
Omit mixed greens and serve seafood cocktail on Asian soup spoons or Belgian endive leaves for an easy to pick up appetizer.
Tip
If you can’t find snow crab use pasteurized fresh crab. You will need about 1 cup (250 mL).
