1French baguette, cut on the diagonal into ¾ inch (2 cm) slices

2 tbsp(30 mL) olive oil

Salt and pepper to taste

8 oz(225 g) tub of mascarpone cheese, at room temperature

3small nectarines, pitted and cut into thin, bite-size slices

8Natural Delights Medjool Dates, pitted and sliced

Honey for drizzling, optional

Instructions

Preheat oven to 400 F (200 C). Brush baguette slices with olive oil and season lightly with salt and pepper. Place on a baking sheet and bake for 10 minutes or until crisp and lightly browned; let cool.

Spread equal amounts of cheese onto baguette slices. Top with alternating slices of nectarines and dates. Drizzle with honey, if desired.
