Chicken, Blue Cheese, and California Prune Pizza

Ingredients

    • 18 oz
      pitted California Prunes
    • 6 oz
      water
    • 12 ½ oz
      balsamic vinegar
    • 12 ½ oz
      olive oil
    • 6 cloves
      garlic
    • 1 Tbs
      dried rosemary
    • 1 teaspoon
      salt
    • 4
      each prebaked thin Italian bread shell (10 ounces)
    • 16 oz
      chopped cooked chicken
    • 12 oz
      crumbled blue cheese
    • 6 oz
      thinly sliced red onion

Instructions

    1. Heat oven to 450ºF. In food processor, process Prunes, water, vinegar, oil, garlic, rosemary and salt until finely chopped, pulsing on and off.
    2. Place bread shell on baking sheet; spread evenly with Prune mixture. Arrange chicken, cheese and onion slices evenly over shell. Bake in center of oven 8 to 10 minutes or until heated through.
    3. Cut into 8 wedges. *Canned Prunes may be substituted for pitted Prunes. Drain liquid and pat dry with a paper towel.
