4 lb1.8 kg Washington Golden Delicious or Granny Smith Apples

⅔ cup160 mL sugar

3 tbsp45 mL fresh lemon juice

4 oz120 mL water

1 tsp5 mL ground cinnamon

¼ tsp1 mL ground nutmeg

1 ½ tsp7 mL vanilla extract

Peel, core and chop apples. Sprinkle sugar over apples. Combine lemon juice and water. Pour over apples; stir gently.

Transfer apples to a large pot. Bring to a boil, cover and reduce heat to low. Cook 10 minutes or just until apples are soft, not mushy.

Stir cinnamon, nutmeg and vanilla.

Purée one-third of the apples and cooking liquid in food processor or blender, until almost smooth. Return to sauce pot.

Cool or serve warm over ice cream; pork or lamb chops or as a side dish to burgers or sandwiches.
