Broccoli and Sweet Potato Fritters

These fritters make a wonderful addition to lunchboxes, packed with veggies and a slightly sweet taste!

Ingredients

    • 2 cups
      U.S. Sweet Potato, grated
    • 1 cup
      U.S. Broccoli, grated
    • 1
      Onion
    • 2
      Eggs
    • ¼
      Extra Virgin Olive Oil
    • 3 tbsp
      Flour
    • ½ tsp
      Pink Salt

Instructions

    1. Peel and grate sweet potato & onion, grate broccoli.

    2. Combine all ingredients in a medium-sized bowl.

    3. Add a drizzle of oil to a frying pan and preheat to medium heat.

    4. Add a heaping spoonful of mixture to preheated pan, patting down to create a even shape *one spoonful per fritter - my frying pan held three at a time, with room to flip*

    5. Cook until golden brown on each side, approximately 4 minutes each.

Notes

⭐️TIP: If packing fritters in the lunchbox, let them cool slightly on a paper towel.  This will allow excess moisture to escape, oil to soak up, and the fritters to become more firm.

Serve with a side of yogurt or sour cream as adip for these Sweet Potato Fritters
