Berry Bars (Vermont Harvest)

Ingredients

    • 1 ½ cups
      375 mL sifted all-purpose flour
    • 1 tsp
      5 mL baking powder
    • ¼ tsp
      1 mL salt
    • 1 ½ cups
      375 mL quick-cooking rolled oats
    • 1 cup
      250 mL brown sugar
    • ¾ cup
      175 mL butter
    • 8 oz
      227 g jar Vermont Harvest Banana Berry or Berry Berry Rhubarb, or pick your favourite flavour!

Instructions

    1. Preheat oven to 375 F (190 C).
    2. Sift together flour, baking powder and salt. Stir in oats and brown sugar and cut in butter until crumbly.
    3. Pat two-thirds of the crumbs in the bottom of an 11 x 7 x 1½ inch (2.5 L) pan. Spread with jam; top with remaining crumbs.
    4. Bake about 35 minutes, cool and cut into squares.
