Almond Quinoa Power Bowl
Almonds, cranberries, and a hint of mint bring this nourishing bowl into play to satisfy you on the busiest days! Created by Corey Calliet, celebrity fitness trainer, on behalf of Almond Board of California.
Ingredients

1 cup(250 ml) uncooked quinoa

1/4 cup(60 ml) dried unsweetened cranberries

1/4 cup(60 ml) sliced almonds

1/8 cup(30 ml) fresh basil

1 tablespoon(15 ml) avocado oil

1/4 teaspoon(1 ml+) sea salt

1 teaspoon(5 ml) lime juice

Instructions

Rinse quinoa well using a strainer under running water before cooking.

In a medium sized pot, add 1 cup (250 ml) quinoa and 2 cups (500 ml) water and bring to a boil over medium-high heat, then cover and decrease to a gentle simmer.

Cook until the quinoa has absorbed all the water (approximately 10-15 minutes). Remove from heat and let stand for 5 minutes.

Add quinoa with all remaining ingredients to a medium sized mixing bowl and gently fluff with a fork until everything is well incorporated.

Garnish with additional basil leaves and enjoy!
