Fall Salad

This Fall Salad is loaded with different colours, textures and tastes from U.S. Pears, Pecans and dried cranberries. The easy homemade dressing compliments the salad perfectly.

Ingredients

Salad Ingredients

  • 4 cups kale, washed, destemmed& torninto bite sized pieces
  • 1 Cosmic Crisp apple, cored & sliced
  • 1 U.S. Bartlett pear, cored & sliced
  • ½ cup U.S. dried cranberries
  • ½ cup U.S. pecans
  • ½ cup feta cheese, crumbled
  • 2 tbsp pumpkin seeds

Dressing Ingredients

  • ¼ cup olive oil
  • 3 tbsp red wine vinegar
  • 2 tbsp maple syrup
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  • In a large serving bowl, whisk the dressing ingredients until combined.
  • Add the torn kale into the bowl with the dressing and massage with your hands until the kale is coated in the dressing and starts to feel softer.
  • Top the kale with apple and pear slices, cranberries, pecans, cheese and pumpkin seeds.
  • Serve and enjoy.
