This Fall Salad is loaded with different colours, textures and tastes from U.S. Pears, Pecans and dried cranberries. The easy homemade dressing compliments the salad perfectly.
Ingredients
Salad Ingredients
- 4 cups kale, washed, destemmed& torninto bite sized pieces
- 1 Cosmic Crisp apple, cored & sliced
- 1 U.S. Bartlett pear, cored & sliced
- ½ cup U.S. dried cranberries
- ½ cup U.S. pecans
- ½ cup feta cheese, crumbled
- 2 tbsp pumpkin seeds
Dressing Ingredients
- ¼ cup olive oil
- 3 tbsp red wine vinegar
- 2 tbsp maple syrup
- 1 tsp Dijon mustard
- 1 garlic clove, minced
- ½ tsp salt
- ¼ tsp pepper
Instructions
- In a large serving bowl, whisk the dressing ingredients until combined.
- Add the torn kale into the bowl with the dressing and massage with your hands until the kale is coated in the dressing and starts to feel softer.
- Top the kale with apple and pear slices, cranberries, pecans, cheese and pumpkin seeds.
- Serve and enjoy.
