  • 1 Medium sized bowl (standard size)
  • 1 Peeler and Grater

  • 2 cups U.S. Sweet Potato, grated
  • 1 cup U.S. Broccoli, grated
  • 1 Onion
  • 2 Eggs
  • ¼ Extra Virgin Olive Oil

  • Peel and grate sweet potato & onion, grate broccoli.
2 cups U.S. Sweet Potato, grated, 1 Onion, 1 cup U.S. Broccoli, grated
  • Combine all ingredients in a medium-sized bowl.
2 cups U.S. Sweet Potato, grated, 1 cup U.S. Broccoli, grated, 1 Onion, 2 Eggs, ¼ Extra Virgin Olive Oil, 3 tbsp Flour, ½ tsp Pink Salt
  • Add a drizzle of oil to a frying pan and preheat to medium heat.
  • Add a heaping spoonful of mixture to preheated pan, patting down to create a even shape *one spoonful per fritter - my frying pan held three at a time, with room to flip*
  • Cook until golden brown on each side, approximately 4 minutes each.

⭐️TIP: If packing fritters in the lunchbox, let them cool slightly on a paper towel.  This will allow excess moisture to escape, oil to soak up, and the fritters to become more firm.
Serve with a side of yogurt or sour cream as adip for these Broccoli and Sweet Potato Fritters
